12 Days of Holiday Baking: Cranberry Bliss Bars

On the second day of Holiday baking, For Love of the Mouse gave to me, delicious copycat Cranberry Bliss Bars to eat!

These are a memorable treat that reminds us of both the holidays and Disney Cruise Line. That’s right. Cove Cafe on the Disney Cruise Line, is an adults only coffee shop that has complimentary pastries and the Cranberry Bliss Bar is one of those pastries.

These are delicious, thick cookie bars topped with a delicous cream cheese frosting and packed with white chocolate chips, dried cranberries and a bright orange flavor. My Dad, who doesn’t like white chocolate or cranberries loves these bars and has now requested them multiple times.

Perfect for a treat for you or a great gift for the person in your life with a sweet tooth.

One of the best flavors in these bars and the key ingredient in our opinion is the orange. While some people add a teaspoon or orange zest, we are adding all the zest to make sure every bite packs a delicious citrus punch.

Orange is one of the underrated flavors of the holidays but if you think about it, it really is prominent in a lot of places… just subtly. We use orange in our Turkey brine, orange in the sangria, orange in desserts and Walt Disney World even uses orange in their decorations!

We are bringing orange front a center with these bars and we can’t wait to share them with you.

Let’s get started.

For The Cookie Bars:

Preheat your oven to 350 degrees and grease a 13×9 inch baking dish.

Melt your butter in the microwave in :30 increments. This helps to not have a big butter explosion in your microwave that you have to clean up. After butter is melted, combine with brown sugar in your mixer. Beat until smooth. It will be a gorgeous caramel color.

Add eggs and mix until combined. Follow that with your orange zest, orange juice and vanilla extract.

Here’s where I get to talk about what, in my opinion, is one of the most important components of baking that, has been forgotten as the world got “busier”. Sift your dry ingredients. It’s so important to a better baked good. It is a step that has been left behind but should be done whenever possible. It only takes a moment and creates a lighter, fluffier, better product.

So! We are going to sift together our dry ingredients; flour, ginger, baking powder and salt.

Slowly add sifted dry ingredients to mixer. Mix until just combined. Do not overmix or your bars will be tough.

Gently stir in white chocolate chips and dried cranberries.

Spread mixture evenly in your greased baking dish.

Bake for 16-20 minutes or until set. Toothpick should come out clean from the middle when the bars are done.

Allow the bars to completely cool before frosting or you will have a sad, melty mess and no one wants a sad melty bliss bar… that’s not bliss.

For The Frosting:

Beat together cream cheese and powdered sugar. Don’t go zero to 60 on the mixer because you will make a giant mess but slowly increase the speed. Mix until smooth and combined.

Add in the orange zest and juice until you reach your desired consistency. You want the frosting to be thick, not runny. I like to add as much orange juice as I can without making it runny in order to make that flavor pop.

Cover bars with frosting.

Top with White chocolate chips and dried cranberries. If you want to get really crazy, add a little extra orange zest or even some candied orange peel on top for an extra pop of color and bright flavor.

There you have it! The best Cranberry Bliss bars. These will transport you straight to the holidays or maybe even to Cove Cafe on the Disney Cruise Line. We love these bars. They definitely are a crowd pleaser.

For the Bars

  • 1 cup Butter Melted
  • 1 1/2 cup Packed Dark Brown Sugar

  • 8 oz Cream Cheese Room Temperature
  • 1 1/2 cup Powdered Sugar Sifted
  • 1 Tbsp Orange Zest
  • 1 tsp Orange Juice or more
  • 1/3 cup Dried Cranberries
  • 1/2 cup White Chocolate Chips
