Disney World Recipe! Columbia Harbor House Lobster Roll With Air Fryer Old Bay Potato Chips

We are having some tasty Disney magic right at home. We made the famous Columbia Harbor House Lobster Roll and we paired it with air fryer Old Bay Seasoned Potato Chips.

The perfect mid-day park treat right in your own kitchen. We love the Columbia Harbor House lobster roll. This dish is such a fan favorite around the park and frequent Disney goers know how delicious it is and that Columbia Harbor House is a Magic Kingdom staple.

Well, now you can bring the magic of the Columbia Harbor House lobster roll home and make this baby right in your own kitchen. We are pairing it with some delicious air fryer Old Bay seasoned potato chips and they are the perfect side dish.

There are several delicious versions of the classic lobster roll and while I actually prefer the butter poached version to the mayonnaise based version, I do thoroughly enjoy both versions.

Columbia Harbor House serves up the mayonnaise based version and the dish comes with house made potato chips. The Old Bay seasoning that we added to our chips give them the perfect New England taste and really add to the whole dish and compliment the roll well.

Let’s get started.

First things first, let’s get the potatoes started because they are what are going to take the longest. Rinse your potatoes and with a mandolin, a Ninja with the slicing attachment or a sharp knife, slice the potatoes in to about 1/8 inch thick slices.

Once sliced, place in a bowl of cold water for 30 to 40 minutes. This will work to pull the starch out which will allow the potatoes to crisp up.

After 30 or 40 minutes drain and rinse thoroughly. Place in a single layer on paper towels and use additional paper towels to dry completely. This will take about 10 minutes. You want them completely dry. Not damp in any way.

Preheat air fryer to 400 degrees. We have a Ninja Air Grill and we absolutely love it. Everything we cook in it has turned out great. It’s easy to clean and very versatile. Highly recommend.

Ninja Air Grill

Fry the potatoes in batches. Spray with cooking spray on each side. Don’t crowd the basket. Fry for 18-20 minutes. Shake or flip the chips at 9 minutes so they evenly crisp.

Immedietely out of the basket, toss with salt, pepper and Old Bay seasoning.

For the rolls, combine softened butter with garlic, parsley, salt and pepper in a bowl and spread on rolls.

Heat skillet to medium high heat. Once pan is hot place rolls butter side down in skillet. Toast em’ up.

Mix together all filling ingredients except for the lobster and then gently fold lobster in until completely combined.

Columbia Harbor House Lobster Roll With Air Fryer Potato Chips

A copycat recipe of the famous Walt Disney World Columbia Harbor House Lobster Roll paired with delicious Old Bay seasoned Air Fryer potato chips.

For Lobster Filling

  • 1 Lb Lobster We used Langostino lobster. Cooked and roughly chopped
  • 1/2 Cup Mayonnaise We used Light Miracle Whip but recommend Mayonnaise for authenticity
  • 1 Lemon Zested and juiced
  • 1 Tsp Old Bay Seasoning
  • 1 Tsp Hot Sauce
  • .5 Tsp Dijon Mustard
  • 2 Cloves Garlic Minced
  • 2 Celery Stalks Chopped
  • 1 Shallot Minced
  • 1 Tsp Chives Chopped, Divided in half
  • 1 Tsp Parsley Minced
  • 1 Tsp Tarragon Minced
  • .5 Tsp Garlic Powder
  • Salt and Pepper to Taste

Garlic Butter Rolls

  • 4 French Rolls Split
  • 2 Cloves Garlic Minced
  • .25 Tsp Salt
  • .25 Tsp Pepper
  • 1.5 Tsp Parsley

Old Bay Air Fryer Potato Chips

  • 2 Russet Potatoes
  • Olive Oil Cooking Spray
  • 2 Tsp Old Bay Seasoning More or Less to Taste
  • Salt and Pepper to Taste


For Lobster Filling

  • Cook Lobster and roughly chop
  • Combine all ingredients for filling, except lobster, in bowl
  • Add lobster and gently fold until completely combined.
  • Set aside

For Air Fryer Potato Chips

  • Wash Potatoes and slice using mandolin, Ninja or sharp knife. Slices should be about 1/8 inch thick.
  • Soak sliced potatoes in large bowl of cold water for 30 t0 40 minutes to pull the starch out.
  • Drain and rinse several times.
  • Lay on paper towels or other drying method and pat dry until thoroughly dry. You do NOT want damp or wet slices. The best way to dry them is to lay them in a single layer on paper towels and then place paper towels on top and pat them dry. This takes about ten minutes.
  • Once completely dry. Heat air fryer to 400 degrees.
  • Air fry in batches. Don't crowd the air fryer or they won't evenly crisp.
  • Air fry for 18-20 minutes. At 9 minutes, shake or turn the chips.
  • Once chips are fried, pour into a bowl and immediately toss with salt, pepper and Old Bay seasoning.
  • Complete the process until all chips are fried.

For Garlic Butter Rolls

  • Soften butter. Don't melt just make sure you can work with it to make it spreadable and able to mix with the other ingredients. Combine garlic, salt, pepper and Old Bay together with butter.
  • Spread butter mixture onto the inside of the rolls.
  • Place Skillet on a burner and heat to medium high heat.
  • Once skillet is hot place rolls butter side down on skillet.
  • Leave on until toasty.

Finish it up

  • Once rolls are done, remove from burner. Place lobster filling in the roll. Pile high with chips next to your roll and get ready to be transported to Disney.

There are so many options for a variety of pieces in this dish. For the mayonnaise, you can substitute plain greek yogurt or miracle whip. Be aware that will make your dish much more tangy and less authentic to the Columbia Harbor House version.

Add tomato and lettuce to your roll to give it some additional freshness and crunch.
