We’ve got another cookie recipe! If you love peanut butter and chocolate, these are the cookies for you. I have a few variations as well for you to customize these for your exact pb chocolate love.
Let’s get started.
Here is what you need for these super simple stuffed cookies.
- 1/2 cup sugar
- 1/2 cup brown sugar
- 12 tablespoons butter , softened
- 1 teaspoon vanilla
- 1 egg
- 1 1/2 cups flour
- 3/4 cocoa powder
- 1/2 teaspoon baking soda
- 2-4 tablespoons milk
FOR THE FILLING:
- 3/4 cup powdered sugar
- 3/4 cup peanut butter
- 1 teaspoon vanilla
There are a couple of steps to these cookies but they are all really simple.
Start by pre-heating the oven to 375 degrees. Line two large baking sheets with silicone baking mats or parchment paper.
With an electric mixer, combine the powdered sugar and the peanut butter with the vanilla until completely combined. Put in a separate bowl and refrigerate while the dough comes together.
For the cookie dough.
In bowl of an electric mixer, beat together eggs and butter for 2-3 minutes until pale and fluffy. Add vanilla and egg. Add remaining dry ingredients until combined. Don’t overmix. Add 2 tablespoons of milk. You want the dough to be tick and smooth, if it is crumbly or dry, add remaining milk.
Remove peanut butter filling from the refrigerator and form into equal size balls.
Take a scoop of dough and work it into a ball then flatter with the palm of your hand, place one of the peanut butter balls into the dough and roll the dough around the peanut butter filling.
Optional would be to roll the ball in plain sugar or sprinkles to give it a little extra pizzaz.
Repeat with the rest of the dough and the peanut butter balls.
Bake for 9-11 minutes.
Voila! My husband loves these cookies. They are incredibly rich and peanut buttery but if that’s your jam, these are for you.
