On one of our recent trips to Walt Disney World, one thing that I was super excited to try was the Kokomora Float which was a holiday speciality Dole Whip treat that had been extended and was still available in March.

Coconut is one of my favorite things ever. Anything tropical is my jam so I was really excited to try this and I’m going to be honest with you. It was one of the most, disappointing treats I have ever had at Disney. It was vanilla ice cream. That’s all it was. I was so disappointed. The cake pop was good though.

So, what I had really wanted to do was mix a Dole Whip Float and the Kokomora Dole Whip. I wanted more of a pina colada with pineapple juice on the bottom and the coconut Dole Whip on top.

So, since I couldn’t get that at Disney and also since Disney is closed. We are making it at home.

I had an idea to take these three ingredients and freeze them and blend them and see what happened and what happened was amazing. I can’t wait to share it with you.

Let’s get started.

Here is what you need:

That’s it. This is vegan and dairy free just like the Pineapple Dole Whip in Disney.

Here is what you want to do. Drain the pineapple and cream part of the coconut milk along with just a bit of the coconut water that is at the bottom of the can into a freezer safe tupperware and place in the freezer.

Next, grab an ice cube tray and fill the tray with the Pineapple Coconut Juice. Place that in the freezer as well but be sure to keep the rest of the juice, you will need it later.

Once everything is frozen solid, remove from freezer and put everything in a blender. put about half of the remaining juice in the blender as well and if you want to add the shredded coconut put that in too.

Start to blend until everything is combined. I ended up having to add the rest of the juice to make it the consistency that I wanted. Once everything is blended out you are done.

That’s it. That’s all she wrote. Super simple, super delicious and refreshing. So glad we decided to try this out and that it worked. Enjoy!

Thank you for stopping by and for the love of the mouse, never forget, that it all started with a mouse.
